One Of Joey's Favorites! I'm Not A Seafood Fan :)



Coconut Fried Shrimp
Sweet & Spicy Mustard Dipping Sauce
Seasoned & Sauteed Pork Chops

Creamy Tomato Bisque & Tomato, Mozzarella and Basil Bruschetta


Creamy Tomato Bisque
o 4 TBS. unsalted butter
o 1 red onion [chopped]
o 1 stalk celery [chopped]
o 2-4 cloves garlic [finely chopped ]
o 5 tablespoons all-purpose flour
o 4 1/2 cups chicken broth
o 1 (28-ounce) can whole, peeled tomatoes
o 3 tsp. parsley
o 2 tsp. thyme
o 2 bay leaves
o 1 cup heavy cream [plus] 1 cup milk
o 5-8 Slices of Pepper Jack Cheese
o Salt & Pepper [to taste]


Directions:


o Heat the butter in a large soup pot over medium-high heat until almost all has melted. Then lower the heat to medium, add the onion, celery, and garlic and cook [covered] stirring occasionally, until soft [about 8 minutes].
o Stir in the flour and pour in the broth and crush the tomatoes through your fingers into the pan. Bring to a boil while whisking constantly. Add parsley sprigs, thyme, & bay leaf together with a piece of kitchen twine and add to the pot. Lower the heat and simmer for 20 minutes. Remove from the heat and let cool.
o Remove bay leaves. Puree until smooth (I did it in my blender, if you don’t have the fancy puree-er J). Transfer the soup back to the pot & whisk in the heavy cream, milk, pepper jack cheese, salt, & pepper. [Be careful with the salt, I didn’t add much & it was too salty for me. My suggestion would be don’t add any salt to the pot… add to your individual soup bowls when served, IF needed.] Serve & Enjoy!



Tomato, Mozzarella and Basil Bruschetta



o 1 Loaf French Bread
o 1 Clove Garlic (Only if you're a fan of garlic, I don't do this part)
o 4 TBS. EVOO
o 1 Tomato
o ¼ Cup Basil Leaves
o Mozzarella Cheese (Block)
o Salt & Pepper (to taste, careful on the salt)


Directions



o Preheat oven to 375 degrees
o In the bowl of a food processor (or blender), add tomato, ¼ cup basil leaves, olive oil and the one clove of garlic. Pulse until smooth, but somewhat chunky. Season with salt and pepper.
o On a baking sheet, line up French bread slices & drizzle with olive oil (Both sides). Toast in oven for about 3 minutes or until light golden brown. Lay a slice of mozzarella cheese on top. Place bread back in oven and melt cheese slightly, about 45 seconds. Remove from oven and spread one tablespoon of the tomato mixture on each piece. Place bruschetta on decorative platter and garnish with basil leaves.

Seasoned Grilled Chicken
Butter & Herb Pasta
Cheesey Broccoli
Oven Baked Parmesean Potato Slices:
4 Medium Size Potato's
(Leave Skin on & Slice)
Lay on Greased Cookie Sheet
(In Bowl):
Melt:
1/4 Cup Butter
1 TBS Minced Onion
2 TBS Parmesean Cheese
Salt & Pepper
Dash of Paprika
*Mix together & brush on top of potato slices. Preheat Oven 425 Degrees. Bake 15-20 Minutes. Enjoy!

Chicken & Steak Shish-Kabobs & MORE!


Kabobs


4 Chicken Breasts
4 New York Strip Steaks
EVOO (Extra Virgin Olive Oil)
Chicken Seasoning
Salt & Pepper
Garlic Salt
Pineapple
Green, Red & Yellow Pepper
Sweet Onion


Directions:
Cut up chicken, steak & veggies into cubes
Drizzle Olive Oil & Salt and Pepper meat & veggies (each in separate bowls (steak, chicken, veggies))
Put Chicken Seasoning On Chicken
Put Garlic Salt on Steak
(Just Salt & Pepper Veggies)
Stick on skewers ... Alternate meat & veggie
Grill on indoor/outdoor grill

Grill Pineapple last - grills very quickly!

Healthy Lemon Drops & The GOOD (Better, but not as healthy) Lemon Drops :)

Healthy Lemon Drops:

Ingredients:
2 eggs
1 cup sugar
2 teaspoons grated lemon peel
2 teaspoons lemon extract
1 1/3 cups all-purpose flour
1 teaspoon baking powder

Directions:
1. In a small mixing bowl, beat eggs until frothy. Beat in the sugar, lemon peel and extract. Combine flour and baking powder; gradually add to sugar mixture.
2. Drop by teaspoonfuls 2 inches apart onto baking sheets coated with nonstick cooking spray. Bake at 325°F for 10-12 minutes or until lightly browned. Cool completely on baking sheets before removing.


The BETTER (Not So Healthy) Lemon Drops :)

Ingredients:
1 Box Lemon Cake Mix
3 Eggs
Powdered Sugar

Directions:

Preheat Oven 325 Degrees

Mix ingredients together and drop on greased cookie sheet (I use an icecream scoop. Put flour on it first to prevent sticking. Bake for 10ish minutes. Depends on oven... Sometimes longer! Right after they come out of the oven sprinkle powdered sugar on them. I use a sifter for this part. ENJOY :)

Oatmeal Scotchies

Ingredients:

1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 cup (2 sticks) butter or margarine, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract or grated peel of 1 orange
3 cups quick or old-fashioned oats
1 2/3 cups (11-oz. pkg.) Butterscotch Flavored Morsels

Directions:

Preheat oven to 375° F.
Combine flour, baking soda, salt and cinnamon in small bowl. Beat butter, granulated sugar, brown sugar, eggs and vanilla extract in large mixer bowl. Gradually beat in flour mixture. Stir in oats and morsels. Drop by rounded tablespoon onto ungreased baking sheets.

Bake for 7 to 8 minutes for chewy cookies or 9 to 10 minutes for crisp cookies. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

Macaroni Grill Oil Dipping Sauce

Dipping Sauce





1 tablespoon crushed red pepper
1 tablespoon black pepper
1 tablespoon dried oregano
1 tablespoon dried rosemary
1 tablespoon dried basil
1 tablespoon dried parsley
1 tablespoon garlic powder
1 tablespoon minced garlic
1 teaspoon salt



Place all ingredients in grinder and grind evenly if you like - if not, mix well. Store airtight. When you want to use it - mix 1 tablespoon of this mixutre with olive oil (extra-virgin preferred). You can adjust the flavor the way you want.
Dip warm bread into mixture and enjoy!
